Description

These Lekkco Stuffed Sugar Cookies are as much of a dessert as they are a snack! They are wonderfully flavored and modestly sweet, making them the perfect tea time (or coffee time) cookie.

Tips:

*If you don’t like the idea of creating a dusty mess everywhere, you can take two 3-foot long parchment paper sheets and sandwich the dough in between before you roll it out.

**To be sure that it’s stiff enough, it would be barely pliable and will keep its shape well. When it starts to get sticky again (and it will) stick the Lekkco balls back in the freezer for about 2 minutes.

Ingredients
  • 00 1 Cup Butter
  • 00 1 1/4 Cup Sugar
  • 00 3/4 TBS Salt
  • 00 1 Egg
  • 00 1 TBS Vanilla Extract
  • 00 2 1/2 Cup Cake Flour
  • 00 4 1/2 TBS Baking Powder
  • 00 1/2 Cup Lekkco Belgian dark chocolate spread
Preparation
  • 00 Preheat oven to 375°F.
  • 01 On a freezer safe plate, spoon out Lekkco into 16 individual dolloped balls, about a teaspoon each. Freeze for 20-30 minutes until stiff.
  • 02 In a large mixing bowl, use an electric mixer to cream butter sugar and salt on low speed for 3-4 minutes. Set aside.
  • 03 In another large mixing bowl, sift the flour and baking powder and set aside.
  • 04 In the butter and sugar mixture, add in the egg, milk, and vanilla then mix until evenly combined.
  • 05 In the same bowl, add the flour mixture about a third at a time until all the flour is used. Mix and softly knead until it becomes a dough. The dough should not be crumbly but do not over mix.
  • 06 On a clean counter top, lightly dust with flour and place dough*. Use a rolling pin to roll dough out to about 1 centimeter thick. This will take up a lot of counter space.
  • 07 Dust a 2-inch glass rim or cookie cutter with flour and cut out 32 cookies. Roll out excess dough and cut out more cookies, if needed.
  • 08 Take the frozen Lekkco chocolate balls from freezer**, lightly dust hands with flour and form a cookie into a cup shape. Add a Lekkco ball, then take another cookie and neatly seal into a thick, even ball. Repeat until all the cookies are stuffed.
  • 09 Place cookies 2 inches apart on a parchment-lined cookie sheet and bake for 10 minutes.
  • 10 Let cool for 2 minutes, drizzle your favorite Lekkco on top the cookies and enjoy!
