Pride Whoopie Pie



Vegan, Nut Free

Yield: 9 servings


  • 00 1 c. All purpose flour
  • 00 1 tsp. Baking Powder
  • 00 ⅛ tsp. Baking soda
  • 00 ¼ c. Sugar
  • 00 ½ c. Lekkco
  • 00 ½ t. Vinegar
  • 00 ⅓ c. Non-dairy Milk
  • 00 Filling
  • 00 ½ c. Vegan Butter, room temperature
  • 00 2 c. Powdered sugar
  • 00 ½ tsp. Vanilla
  • 00 Food coloring (red, green, yellow, blue or the whole rainbow preferably)
  • 00 Preheat the oven to 350F and line a baking sheet with parchment or foil and set aside.
  • 01 Add the vinegar to the milk and set aside. In a large bowl, whisk together the flour, baking powder, baking soda, and sugar. Add the milk to the dry mixture and mix until combined
  • 02 Add the Lekkco to a small bowl with about ¼ cup of the batter and whisk together. Add the Lekkco mix to the rest of the batter and gently mix until combined, do not overmix
  • 03 Using a small cookie scoop or large spoon, scoop the batter onto the pan 2 inches apart and bake for 10 minutes. Repeat until all the batter is cooked. Set aside to cool completely.
  • 04 Filling:
  • 05 In a large mixing bowl, add the butter and beat with an electric mixer until creamy. Add the powdered sugar 1 cup at a time, mixing until combined. Add the vanilla and mix until combined.
  • 06 Portion the filling into 7 different bowls and make one each color of the rainbow using the food coloring.
  • 07 Lay out a piece of plastic wrap and in the center pipe a line of each color of filling evenly onto the center. Roll up the plastic wrap horizontally to the lines then cut off one of the ends right where the filling starts.
  • 08 Add that to a piping bag with your preferred piping tip and pipe onto the flat end of half of the cookies. Sandwich the filling in with the other half, serve and enjoy! Happy Pride Month!
