Description

Sweet and tangy tart crust paired with creamy chocolate filling and caramelized pears.

Ingredients
  • 00 3 oz. Cream Cheese, room temperature
  • 00 6 Tb. Butter, room temperature
  • 00 ¾ c. Powdered Sugar
  • 00 1 Egg Yolk
  • 00 ½ t. Salt
  • 00 ½ t. Vanilla
  • 00 1 ½ c. Flour
  • 00 1 Pear; peeled, cored and halved
  • 00 1 Tb. Butter
  • 00 2 T. Maple Syrup
  • 00 ¾ c. Lekkco
  • 00 1 ½ c. Heavy Cream
  • 00 1 ½ Tb. Cornstarch
  • 00 ½ t. Salt
  • 00 ½ t. Vanilla

Preparation
  • 00 Grease a pie or tart dish. Set aside.
  • 01 In a large mixing bowl, beat the cream cheese and butter together with an electric mixer until smooth.
  • 02 Sift in the powdered sugar and mix until combined.
  • 03 Add the yolk, salt, and vani lla and mix until combined.
  • 04 Sift in the flour and mix until just fully combined. Do not overmix, the mixture will be crumbly.
  • 05 Pack the crust into a ball and wrap in plastic wrap. Refrigerate for 20 - 30 minutes.
  • 06 Place the dough between 2 sheets of parchment paper and roll out to ¼” thick. Preheat the oven to 325F and stick the dough back in the fridge for 10 minutes.
