Peanut Butter Lekkco Protein Balls

Description

Is it possible to have too many Peanut Butter Lekkco Protein Balls? We don’t think so. One of our favorite combinations, is chocolate and peanut butter would you agree? Simple treats perfect for parties or as a surprise for any chocolate and peanut butter lover. Watch them disappear!

Ingredients
  • 00 ½ cup Coconut Flour
  • 00 ¼ cups Almonds
  • 00 2 tbsp Chia Seeds
  • 00 2 tbsp Maple Syrup or Agave
  • 00 6 tbsp Lekkco
  • 00 2 tbsp Peanut Butter
  • 00 2 tbsp + 2 tsp Amaranth, popped
Preparation
  • 00 In a food processor, combine all ingredients except the amaranth and process until all the ingredients and ground down and combined. Scrape down the sides as necessary.
  • 01 Add the amaranth and pulse until just combined. Avoid over - processing to maintain the popped amaranth kernels.
  • 02 Scoop out the dough and compress into balls, yielding about 10 each. Enjoy or store in an airtight container for 2 weeks.
