Description

As cookie season rapidly approaches you all know that baking season is coming up too! Our dark chocolate palmier cookies are great to include in your cookie collection! This 4 ingredient recipe (if you buy ready-made puff pastry) is perfect for those looking for an easy and delicious cookie.  The best part? You can eat them in under an hour!

Yield: 15-16 cookies

Time: 45 minutes

Ingredients
  • 00 1 Sheet Puff Pastry, store bought
  • 00 2 Tb. Lekkco
  • 00 1 Tb. Sugar
  • 00 1 t. Cinnamon, optional
  • 00 2 Tb. Sugar
  • 00 Flour for dusting
Preparation
  • 00 Thaw the puff pastry dough as instructed, dust a clean work surface with flour, and roll out the dough to a 9x15” rectangle.
  • 01 Using a spatula, spread the Lekkco onto the dough into a thin layer, leaving ½” of the edges uncovered. If using cinnamon, mix it with 1 tablespoon of the sugar and sprinkle it over the Lekkco, evenly.
  • 02 From the short ends, roll up both sides of the dough to the center, making sure both sides are of even thickness. Freeze the dough for 20 minutes then preheat the oven to 450F.
  • 03 Slice the cookies to be about ¼” thick and dip each side in the rest of the sugar. Place on a parchment lined cookie sheet and bake for 5 minutes, pull them out, flip them, then bake for 3 - 5 minutes or until golden brown and the sugar has caramelized.
  • 04 Let cool, serve and enjoy!
