These soft, airy, bouncy, and chewy donuts are fun to look at and eat! It’s hard not to take a second look at these playful looking donuts especially when their unique chewy texture that sets them apart from the regular donuts.

Gluten Free, Vegan, Nut Free

Yield: 6 donuts

Time: 30 minutes

Ingredients
  • 00 3 Tb. Milk of choice
  • 00 ¼ c. Glutinous rice flour
  • 00 1 ¼ c. Glutinous rice flour
  • 00 ¼ c. Sugar
  • 00 1 t. Baking Powder
  • 00 ¼ t. Salt
  • 00 2 Tb. Butter or oil, room temperature
  • 00 ½ c. + 2 Tb. Hot milk or water
  • 00 Oil for deep frying
  • 00 Lekkco, for topping
  • 00 Sugar glaze, optional
Preparation
  • 00 In a large mixing bowl add the 1 ¼ cup of rice flour, sugar, baking powder, and salt then whisk to combine. Set aside.
  • 01 In a small microwave safe bowl, add the 3 tablespoons of milk and the ¼ cup of rice flour and mix until combined. Microwave for 30 seconds and mix until it forms a translucent, sticky dough. If it is still opaque and runny, microwave for 15 seconds more. Add to the dry ingredients.
  • 02 Add the butter and hot milk or water to the dry ingredients and mix to create a stiff dough. The dough should be dry enough to handle, if not add a teaspoon of rice flour until it is tacky.
  • 03 Dust a clean surface with some rice flour and knead the dough by hand for about 5 minutes to create a stiffer dough. The dough should still be tacky to the touch.
  • 04 Preheat the frying oil to 375F. Cut 6 squares of parchment large enough to hold a donut and set aside. Form the dough into a round ball and cut into 6 pieces.
  • 05 Form each piece into a ball and cut into 8 pieces. Roll each piece into a ball and place on a piece of parchment to form a ring. Cover with plastic wrap or a damp towel and roll out the rest of the dough to make 6 donuts
  • 06 Once oil is preheated, place 1 or 2 donuts into the oil with the parchment and remove the parchment after 20 - 30 seconds. Flip the donut once the donut has lightly browned and remove once golden brown on both sides.
  • 07 Let cool to the touch, drizzle or dip into Lekkco, serve and enjoy!
