Marble Cake



This easy marble cake recipe will give you pretty and elegant results time after time. Keep it basic or top with a sprinkle of confectioners’ sugar and Lekkco.


Yield: 3 – 6” cake layers, 8 servings

Time: 1 hour

  • 00 2⁄3 c. Butter Milk (2⁄3 c. milk + 1⁄2 t. vinegar)
  • 00 1 3⁄4 c. Cake Flour
  • 00 1 Tb. Baking Powder
  • 00 1⁄2 t. Salt
  • 00 1 c. Butter, room temperature
  • 00 1⁄3 c. Light brown sugar, packed
  • 00 2⁄3 c. Sugar
  • 00 1 Egg, room temperature
  • 00 3 Egg Yolks, room temperature
  • 00 2 t. Vanilla
  • 00 1⁄2 c. Lekkco
  • 00 Grease and line 3 - 6” cake pans or 2 - 8” or 9” cake pans with parchment and set aside. Preheat the oven to 350F.
  • 01 If you do not have buttermilk already made, mix the vinegar and milk together and set aside to curdle.
  • 02 In a mixing bowl, sift and whisk together the flour, salt, and baking soda then set aside.
  • 03 In a large mixing bowl, add the butter and whip with an electric mixer on medium-high speed for 1-2 minutes until light and fluffy. Add the sugars and beat for 3-5 minutes until light.
  • 04 On medium-low speed, add one egg/egg yolk at a time then scrape the bowl. Add the vanilla and mix until combined.
  • 05 Alternate adding 1⁄3 of the buttermilk and 1⁄3 of the dry mix on medium speed, scraping the bowl as necessary. Do not over mix.
  • 06 In a small bowl, microwave the Lekkco for 10 seconds then add 1 cup of the batter and mix until just combined.
  • 07 In each cake pan, add 1 scoop of the plain batter then the Lekkco batter and alternate to layer it in and make sure each pan has about the same amount of batter. Each pan should be about half full.
  • 08 With a knife or tooth pick, swirl the batter together to create a marbling effect. Gently yet firmly slam each pan down to release excess bubbles then bake for 30-35 minutes until a toothpick poked in the center of each cake comes out clean.
  • 09 Let cool completely before frosting, serve and enjoy!
