The perfect way to remind someone that you adore them.

Ingredients
  • 00 ½ c. butter, room temperature, browned (optional)
  • 00 ½ c. Powdered Sugar
  • 00 2 Egg Yolks
  • 00 ½ t. Salt
  • 00 1 t. Vanilla
  • 00 2 Tb. Milk
  • 00 1 c. Flour
  • 00 ½ c. Cornstarch
Toppings
  • 00 ½ c. + 2 Tb. Lekkco
  • 00 ¾ c. Butter, room temperature
  • 00 1 c. Powdered Sugar
  • 00 ¼ c. Heavy Cream
  • 00 1 Tb. Lekkco
  • 00 Assorted red berries
Preparation
  • 00 In a large mixing bowl, beat the butter with an electric mixer to chunks, add the powde red sugar, egg yolks, salt, and vanilla and beat to a paste. Add the milk and mix until combined.
  • 01 Sift the flour and cornstarch into the dough and beat partially together with the electric mixer. Mix with a spatula or your hands to a crumbly dough then gently knead it together until it forms a smooth ball.
  • 02 Form into a disk and wrap in plastic, then ref rigerate for 20 minutes but no longer than 30.
  • 03 While that chills, use a large heart shaped cookie cutter or cut a piece of parchment into a heart shape with the center also cut out, about 6x4 inches big.
  • 04 Pull the dough from the fridge and preheat the oven to 325F. Roll the dough out to ¼ - ½ inch thick between parchment paper and cut out 2 heart shapes with a dull knife.
  • 05 Set the cookies about an inch apart on a baking sheet with the parchment and bake for 12 - 13 minutes until the edges lightly brown. Set aside to cool.
  • 06 Buttercream and assembly
  • 07 In a large mixing bowl, beat together the butter and Lekkco until smooth.
  • 08 Sift in the powdered sugar and beat until smooth, adding the heavy cream slowly. Fill a piping bag with a round tip about halfway with the butt ercream and set aside.
  • 09 Place the bottom cookie onto the desired serving plate and pipe large dots of buttercream evenly across the cookie about an inch tall.
  • 10 Gently but firmly place the other cookie on top and pipe shorter dots across the top, gently swir ling with each release.
  • 11 Place the berries on top as desired. Melt the Lekkco in the microwave for 10 seconds and drizzle across the top. Serve and enjoy!
