Ingredients
  • 00 6 Dates, pitted and minced
  • 00 ¼ c. Coconut Lekkco
  • 00 ½ tsp. Salt
  • 00 3 Tb. Toasted coconut
  • 00 1 c Old fashioned oats
  • 00 ½ c. Crispy rice cereal
Toppings
  • 00 About ½ c Greek yogurt
  • 00 About ¼ c. Cherries, halved and pitted
  • 00 About ¼ c. Raspberries
  • 00 1-2 Tb. Toasted coconut
  • 00 3 Tb. Lekkco
Preparation
  • 00 Mince the dates and add to a saucepan. Add the Lekkco and heat over low heat until melted. Remove from heat, add the salt, and mix to combine.
  • 01 Add the toasted coconut, oats and rice cereal and mix until evenly coated.
  • 02 Line an 8 or 9” pie dish with plastic wrap or grease generously then add and press the granola mixture into an even layer. Wrap or cover and let set until cooled completely, about 2 hours or overnight.
  • 03 Uncover the crust and spread the yogurt over in an even, generous layer, top with the berries and toasted coconut. Drizzle on the Lekkco as desired, serve and enjoy!
