Fresh Fruit Sushi Rolls



Chef Corina whipped up a super delicious recipe for everyone – fresh fruit sushi! She created these with delicious Rice Krispies cereal and it turned out amazing! We’re hoping you love it too!

  • 00 4 T Butter
  • 00 ¼ t. Salt
  • 00 4 c. Mini Marshmallows
  • 00 4 c. Crispy Rice Cereal
  • 00 1 t. Vanilla
  • 00 1 Mango
  • 00 5 Strawberries
  • 00 1 Kiwi
  • 00 Lekkco
  • 00 In a saucepan, add butter and salt over medium - low heat until the butter melts. Add the marshmallows and stir until completely melted. Remove from heat and stir in the vanilla.
  • 01 Add the crispy rice cereal and mix until evenly distributed.
  • 02 To make the rolled up sushi, pour half of the mix onto an oil - sprayed piece of parchment and spread out evenly to about ½ - ¼” thick. Let cool for about 5 minutes.
  • 03 Pipe or spread a thick line of Lekkco perpendicular to the way it will be rolled up.
  • 04 Cut the fruit very thin an d layer the fruit onto the Lekkco as desired, roll it up carefully, and let sit for 10 minutes to completely cool.
  • 05 While that sets, form the rest of the mix into oval - shaped rice balls, about 16 each. Pipe or spread a thick line of Lekkco onto each rice b all and lay the fruit on top as desired to resemble sashimi on rice.
  • 06 Cut the sushi roll into 1” pieces and enjoy!
