Ingredients
  • 00 8 Mini flour tortillas
  • 00 ½ c. Cinnamon sugar
  • 00 ½ - ¾ c. Lekkco
  • 00 1 pint Vanilla Ice Cream
  • 00 ¼ c. Melted butter (or spray oil)
  • 00 Whipped cream for topping
  • 00 Sliced fruit for topping (strawberries, bananas, etc.)
Preparation
  • 00 Preheat the oven to 325F.
  • 01 On a large plate, lay the tortillas out and brush with melted butter or spray with cooking oil. On another large plate, spread the cinnamon sugar into an even layer.
  • 02 Place the tortillas into the cinnamon sugar oiled side down and set aside.
  • 03 Take foil and roll into 1 ½ inch thick tubes, making 4 tubes. On a 9x13” baking pan, line with foil and set aside.
  • 04 Place the tortillas around the rolls of foil with the sugared side up, making sure it is in the desired taco shape. Place onto the foil-line pans and bake for 10 minutes. Set aside to cool completely.
  • 05 Once cooled they should be stiff. Spread an even layer of Lekkco inside each tortilla shell then add a scoop or two of ice cream. Top with whipped cream and sliced fruit then drizzle with more Lekkco.
  • 06 Serve immediately or freeze to enjoy later!
