Crispy Stuffed French Toast

Time: 30 minutes

  • 00 1 Challah bread loaf, a day old
  • 00 ½ - ⅔ c. Lekkco
  • 00 2 ½ c. Rice crispy cereal
  • 00 3 Eggs
  • 00 ¾ c. Milk
  • 00 3 Tb. Sugar
  • 00 ½ tsp. Salt
  • 00 1 tsp. Vanilla
  • 00 ¼ c. Butter, for frying
  • 00 Slice about ½ inches off the ends of the bread to make them flat then cut the loaf into 8 equal slices. They should be about 2 inches thick. Take a sharp knife and carefully cut a slit into the bottom of each slice to add the Lekkco.
  • 01 Spread some Lekkco into each slice and add marshmallow fluff or berries if desired and set aside. Add the rice cereal to a pie dish or large plate and set aside.
  • 02 In a pie dish whisk together the eggs, milk, sugar, salt, and vanilla and set aside.
  • 03 Place a large frying pan or skillet over medium heat and add a generous amount of butter. Dip both sides of one slice of bread into the egg mixture and then into the rice cereal, making sure it is evenly coated.
  • 04 Place into the pan, frying both sides until golden brown. Repeat until all the bread has been fried, adding more butter as needed.
  • 05 Serve as desired and enjoy hot!
