Time: 45 minutes

  • 00 ½ c. Coconut Milk
  • 00 1 tsp. Vinegar
  • 00 1 c. All Purpose Flour
  • 00 1 c. Cake Flour
  • 00 ⅓ c. Sugar
  • 00 ½ tsp. Salt
  • 00 2 tsp. Baking powder
  • 00 ½ tsp. Baking Soda
  • 00 ½ c. Toasted Coconut
  • 00 ½ c. Vegan butter, frozen
  • 00 ½ c. Coconut Lekkco
  • 00 Toasted coconut, for topping
  • 00 Coconut milk, for brushing
  • 00 Preheat the oven to 400F and grease or line a baking sheet with foil.
  • 01 Add the vinegar to the coconut milk and set aside.
  • 02 In a food processor, add the flours, sugar, salt, baking powder, and baking soda then pulse together for about 30 seconds.
  • 03 Cut the butter into cubes and add to the food processor with the toasted coconut and pulse until there are pea - sized pieces but no smaller.
  • 04 Pour in the coconut milk and pulse until the mixture just barely starts to come together as a dough. It will be a bit crumbly and lumpy.
  • 05 On a lightly flour - dusted surface, scoop the dough out of the food processor and with your hands, fold and pack it together to for m a ball. Do not over knead, it should still be crumbly.
  • 06 Shape the dough into a circle about 8 inches in diameter, about 1 inch thick.
  • 07 Cut into 8 equal triangles, brush the tops with coconut milk and sprinkle over with toasted coconut.
  • 08 Add to the baking sheet 1 - inch apart and bake for 15 - 17 minutes or until golden brown.
  • 09 Let cool and drizzle with the Coconut Lekkco (or any Lekkco you’d like), serve and enjoy!
