Description

So easy and delicious.  We love them as a snack or healthier dessert.  If you eat Vegan or have a gluten-free diet, this is a perfect recipe for you!

Ingredients
  • 00 3 Cups Unsweetened shredded coconut
  • 00 1/4 Cup Maple Syrup
  • 00 2/3 Cup Coconut Oil
  • 00 1 tsp. Vanilla
  • 00 1 TBS + extra for drizzle Lekkco
  • 00 Pinch Sea Salt
Preparation
  • 00 Line a 4x8” pan with plastic wrap and set aside.
  • 01 In a large mixing bowl, mix together maple syrup, coconut oil, vanilla, and salt until smooth.
  • 02 Add shredded coconut and mix until combined.
  • 03 Spoon half the mixture into the pan and press into an even layer. Add 1 T of Lekkco and smooth into an even layer. Add the rest of the mixture, spread evenly and press down.
  • 04 Fold over the edges of the plastic to seal in the coconut bars and freeze for 10 minutes. Unwrap and cut into squares. Drizzle with Lekkco and enjoy!
