Banana Oat Muffins



The idea of having a batch of healthy muffins to have on hand for easy breakfasts, snacks, and lunches sounds like a dream come true. We can store them in the fridge, and not worry about their flavor —and they’re  a good quick meal option.

  • 00 1 cup All-Purpose Flour
  • 00 1 ½ cups Old-Fashioned Oats
  • 00 1 ½ tsp Baking Powder
  • 00 1 tsp Baking soda
  • 00 ½ tsp Salt
  • 00 1 tsp Cinnamon
  • 00 ¼ cup Vegetable Oil
  • 00 ½ cup Brown Sugar
  • 00 1 cup Ripe Bananas, Mashed
  • 00 2 Eggs
  • 00 1 tsp Vanilla
  • 00 1 cup Non-fat Greek Yogurt
  • 00 ¼ cup Lekkco
  • 00 2 tbsp Vegetable Oil
  • 00 6 tbsp Brown Sugar
  • 00 ½ cup Old-fashioned Oat
  • 00 Preheat the oven to 350F and grease and line a muffin pan. Set aside.
  • 01 Sift together the flour, baking powder, baking soda, salt, and cinnamon. Mix in the oats and set aside.
  • 02 In a large mixing bowl, combine the oil, brown sugar, yogurt, and bananas. Then add the eggs and vanilla until combined.
  • 03 Add the dry ingredients to the wet and mix until combined. Do not overmix.
  • 04 Combine all the ingredients for the streusel topping in a separate bowl and set aside.
  • 05 Scoop the batter into the muffin pan ¾ of the way. Spoon in 1 teaspoon of Lekkco in each muffin and swirl with a toothpick.
  • 06 Sprinkle the streusel topping as desired and bake for 30 minutes, flipping the pan at the halfway point. Let cool completely, remove from the pan and enjoy!
