Lekkco’s Haunted House Spooktacular

This recipe is perfect for your in-home Halloween activities. You can make this days ahead and nibble on it all October.  So grab your little boys and ghouls for a family-friendly activity.  It’s easy to construct this adorable and edible Lekkco Haunted House to get everyone in the Halloween spirit.

Ready to build this spooky delight?  Here’s what you’ll need:

Ingredients:

  • 1-2 sleeves of graham crackers
  • 1 Tb. egg white
  • ½ c. powdered sugar
  • Black gel food coloring
  • Red gel food coloring
  • 3 T. + ¼ c. Lekkco
  • 12 Oreos
  • Assortment of Halloween candy and sprinkles
  • 3 Cherry hard candy (jolly rancher)

 

Equipment:

  • 4 piping or sandwich bags
  • Small serrated knife
  • Baking sheet
  • Parchment paper
  • Scissors
  • Spatula
  • Whisk
  • Mixing bowls
  • Toothpicks
  • Large plate or baking pan

 

Directions:

  1. It is preferred that the graham crackers are left uncovered overnight to allow them to stale a bit. This makes them much easier to cut without crumbling.
  2. Make the royal icing by whisking the egg whites into the powdered sugar one teaspoon at a time until the consistency is thick, smooth, and takes at least 10 seconds to settle into the rest of the icing. Mix in some black food coloring to the desired shade and put into a piping bag, making it as airtight as possible, and set aside.
  3. Following the video, cut the graham crackers to form the sides and roof of the house and cut out the windows and door. Reserve the scraps for later. Mend any breaks with royal icing.
  4. Preheat the oven to 350F and line a baking sheet with parchment paper. Set aside.
  5. In a piping bag, add cherry hard candies and smash to small shards. Place the graham cracker walls with windows onto the baking sheet and gently pack the candy shards into the window openings. Bake for 4 minutes or until the candy starts to bubble.
  6. Pull out the oven and stir the candy with a toothpick immediately to pop the bubbles, then set aside to harden for 5-10 minutes. Glue the door onto the house.
  7. Build the base of the house with 5 individual graham crackers and the royal icing. Set aside to harden.
  8. Set up the walls on top of the base and glue together with royal icing. Add the roof and let sit for 30 minutes.
  9. Glue the house on to the base and set aside. Glue a square of graham crackers onto the pan with royal icing then glue the house onto the square. Set aside.
  10. Take the Oreos and scrape the cream filling into a bowl and put the cookies into a sandwich bag or in a food processor. Smash or process the Oreos to a crumbly, dirt consistency. Set aside.
  11. Add 3 Tb. of Lekkco to the Oreo cream and mix until combined and smooth. Set aside.
  12. Take the graham cracker scraps and glue them down around the house to make the dirt areas rise around where the red river will be.
  13. Take the Lekkco-Oreo cream mixture and pipe it onto and around the base of the house and cover all the glued down graham cracker pieces. Spread it out evenly with a spatula and cover it with the Oreo dirt.
  14. Create the headstones by cutting 4 individual graham crackers in half, totaling 8 from one graham cracker sheet
  15. In a separate bowl, add ¼ c. of Lekkco and enough red food coloring to create the red river. Add the Lekkco to a bag, cut a small hole, and decorate the house and headstones. Cut a larger piping hole and fill in the river.
  16. Place the headstones throughout the graveyard with the candies and sprinkles as desired and enjoy!
